Born in Saratoga Springs, New York, Fire Mission Smokehouse & Taproom owner and pitmaster Justin Prescott spent much of his youth in a small Texas town, where he developed a lifelong appreciation for authentic barbecue, Tex-Mex cuisine, and the powerful role food plays in bringing people together. While his passion for cooking started early, it was his service in the United States Army as a Forward Observer—completing three combat deployments in support of Operation Iraqi Freedom and Operation Enduring Freedom—that shaped the discipline, leadership, and attention to detail that define Fire Mission today.

Throughout his military service, Justin experienced cultures and cuisines from around the world, gaining a deep appreciation for the traditions, techniques, and flavors that make great food memorable. After returning home, he combined those experiences with the barbecue traditions he learned in Texas, dedicating himself to mastering the craft of authentic, slow-smoked barbecue.
